Plan On A Good Week Meal Plan

I can not tell a lie. I didn't do so great last week but I also know why. I didn't make my meals ahead. Got busy and then lazy on the weekend and tricked myself into thinking that since I already knew what I planned to prepare, it would be so bad. And so on Tuesday (and Friday when I was tempted to eat out), we did! Because there wasn't anything already made and waiting at home.

I've learned 2 things in the 2 weeks I've been trying the make ahead meal plan.
  1. I am less tempted to eat out and/or drive-thru dine on impulse when something is already made.
  2. You must make the meals ahead! Or at least prep (browning meat, chopping veggies, etc.) in order for this system to be most helpful. No slacking!!!

With all that being said, here is my meal plan for the week. I've decided to keep it light but tasty. Hope you are inspired to cook something new. Don't forget to make a few of these ahead of time to save yourself more time during the week...just re-heat and eat.

Sunday
Honey Baked Chicken w/ Rice & Veggies
*I know I was supposed to make it last week*

Monday (Meatless Monday)
Ultimate Salad 
*Kind of our kitchen sink type of salad, we put yellow rice & crushed tortilla chips too.

Tuesday
Chicken N-Dumplings (this past week's recipe round-up recipe)
Kielbasa Soup (for the boy, it's already made. I placed a single serving in the freezer last time I made it)

Wednesday
Beef & Bean Burritos
*I made the meat ahead but will assemble the night of*

Thursday
Chicken Stir-fry over rice

Friday
"Free For All"
*Also Known As: Mommy's Night Off. 

Saturday
Eat Out
*pat on the back for doing such a good job this week*
