A Whole Lotta Muffins

I have a lot of Aunt Jemima Pancake mix, 2 boxes. Unfortunately, it's about to expire because it was a great deal at the time I was couponing for it. Now because I refuse to let it go to waste, I've found something to make with it.

1. I have no one to make an entire box of pancakes for (with a deployed hubby and a gluten free son).
2. Muffins are great to freeze, making a grab and go breakfast for me.

Next, I found a deal on Blueberries this week .99cent/container. I took it as a sign that muffins were to be made. I used 2 different recipes.

Blueberry Pancake Muffins (from Aunt Jemima's website)
*this doesn't bake a very sweet muffin, it's about as sweet as a pancake would be*
These muffins bake up just like they would at Panera or Starbucks, slightly rounded cones on top. Beautiful. But I happen to enjoy a slightly sweeter muffin but I like them because I feel a little healthier when I eat them because they aren't as sweet. I did gift a 1/2 dz of these to my neighbors who were sweet enough to shovel my driveway. They don't really do sweets, so it was perfect and they loved them.

I made a second batch using the following recipe [fresh blueberries and diced peaches (from the jar)]. They bake flat across the tops, so not a pretty and perfect but they are heaven to eat. I do believe peaches and blueberries were meant to marry in muffins. Maybe I shall call them, my Summer Fruit Muffins.

Summer Fruit Muffins
3 tbsp. butter or margarine
2/3 cup sugar
1 egg
1tsp. vanilla
1/2 cup milk
1 1/2 cup pancake mix
1/2 cup diced peaches
1/2 cup fresh blueberries

Preheat oven to 350 degrees. In a large bowl, cream together butter and sugar. Beat in 1 egg. Add milk and vanilla. Add in pancake mix and little at a time. Fold in fruit. Spoon batter into greased muffin pans (I use an ice cream scoop so all muffins will be the same size). Bake at 350 for approx 25min.

If you really want to get fancy. While they are still hot, rub them with butter and sprinkle with course sugar. Either way, ENJOY! Treat your family to an unexpected treat this week.
