Dinner? Done!

The man child and I made this fab recipe for Corn Salad yesterday. We enjoyed it soooooo much, we just had to share. It is a total keeper for all upcoming showers, BBQ's, potlucks, and it's cool enough for this summer heat. It's cheap enough and easy enough to prepare.

Corn Salad
in a medium bowl, combine:
2 cups corn (frozen or fresh, if frozen allow to thaw)
1/2 cup red onion
1 cup quartered grape tomatoes
*you can substitute tomatoes for green apples or black beans*

Dressing For Salad
in a small bowl, combine:
2tbsp chopped cilantro (you can also use parsley)
1/4 cup canola oil
2 tbsp apple cider vinegar
1 tbsp spicy mustard
1tsp cumin (ground)
Whisk Together & Pour over corn mixture. Chill for 20 minutes for better flavor or overnight for BEST flavor.

The man child loved it so much, he woke up talking about it this morning! Now that's a dish! Let me know how you enjoy it. (In my best Julia Child voice, "Bon Appetit.")
