Healthy Meatballs (and Gluten Free)

Who knew chilli sauce and red current jelly would make such a awesome sauce for meatballs? My mother-in-law, that's who! My goodness, I almost hurt myself eating dinner today. The Mr. was inspired to make his mother's mouth watering meatballs with the leftover turkey meat from our Once A Month Cooking project.

We just  so happened to catch an episode of The Biggest Loser yesterday. One of the final four contestants was showing his very Italian family how to make healthier meatballs. He started by using ground turkey instead of ground beef, using chickpeas instead of breadcrumbs and egg to bind, and baking instead of frying. Well we were sold. And today, we pulled it off!!!

It was so easy. We seasoned the meat as usual  (salt, pepper, garlic, onion powder, etc.), then we mashed up the chick peas (a food processor would help but a fork will do), added it to the meat mixture and rolled into balls. We lined a cookie sheet with parchment paper (I hate washing dishes) and baked at 375 for about 30 minutes.

Without the addition of bread or eggs means the man child could eat them too. With the sweet chilli sauce (2 ingredients which I have never purchased before)...mmm-mmm-mmm. See watching TV can be good for you, lol. Catch you guys later and as Julia Child would say, Bon Appetite.
